Bonjour mes amis!
I love to BAKE! I don't LOVE to cook meals all the time...sometimes I enjoy it...but mostly, I enjoy baking. For many years, my Mom has made Carrot Bread, and we love all things Carrot...Bread, Muffins, and especially, Carrot Cake with Cream Cheese Frosting...
Today, I'd like to share my Mom's Recipe for a small loaf of Carrot Bread, however, I'm going to change it up, and make little Carrot Breads in Rammekins. I love the little White Ramekins I bought here, and enjoy using them whenever I can.
So, here's how they came out...are you interested?
Well, they are moist and delicious, and will please everyone in the family.
So, let's start with the recipe...
24 Karat Bread
1 1/2 cups of Flour
1 cup of Sugar
1/2 tsp. Salt
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1 tsp. Cinnamon
1 cup of grated Carrots
2/3 cup of Vegetable Oil
2 Eggs
Combine the dry ingredients and then add the wet, and stir it up.
Pour into a greased pan, or about 10 rammekins.
Bake at 350 degrees for approximately 35 minutes.
(If you are making bread, it will take closer to an hour to bake.)

...and into the Ramekins...
Here we are all baked! Mmmmmm! And they have the perfect little crunch on the top when they first come out of the oven. You might want to start a pot of coffee! Oh, and these freeze very well, if you can get them packed up before they get eaten!
I better make some more carrot bread. As soon as my grown children arrive for Christmas, these will be gone in the blink wink of an eye!

Is that the same recipe we use for carrot muffins? They look the same. Also what are ramekins?
