What's for Dinner?

20/03/2013

Bonjour mes amis!

Today, let's talk about Dinner...

What are you making for Dinner tonight?

Last weekend, Dr. J made Dinner for us on Saturday night, and it made quite an Impression...

He grilled Sausages for us...down on the Sidewalk...in front of our Apartment Building!

YES, HE DID!

Some Passersby laughed...

Some raised their Arms in disbelief...

Some rolled their Eyes...

Some Children walking along with their Dad looked on eagerly, like they'd like to join us for our Meal...

All in all, Dr. J did good!  The Sausages were delicious!

And, it was really nice for us Texans to have Grilled Meat, again!

I'm sure Dr. J will do it again, too!
(Personally, I'll stay in the Kitchen and cook, but I'm pretty sure Dr. J enjoyed entertaining our Neighbors!)

Last night, I made something for Dinner that went over real well, too...

Mini Chicken Pot Pies!

They were made from Scratch...no Cream of Chicken Soup in these babies!  My guys love Pot Pies, and we haven't had them here in France, but I was quite sure I could make them for us...and how fun to have them in mini-form!

The other day, I stumbled onto a Blog called, Love Grows Wild, and this talented blogger gave me the Inspiration and Recipe I needed.  You can take a look at the blog post HERE if you'd like, because there's beautiful pictures and clear instruction, but I'll also give you the Recipe below.

Here's how mine came out...

Does this look like something your family would enjoy?  The Recipe says it makes Four Ramekin Servings, so I doubled the Recipe, but doubled, it actually made more than Eight Ramekins full, so I guess I didn't need to double the Recipe for the three of us afterall.  Here are mine, ready to go in the Oven...

And, here they are...ready to eat!

AND...I had some very satisfied Men in my Home!

These Pot Pies were delicious, and pretty easy to make...granted, mine didn't have Celery in them, because you can't get Celery in the Grocery Store year round here, but we didn't miss it at all.

Here's the Recipe, directly from the Love Grows Wild Blog...

  Mini Chicken Pot Pies

3 tablespoons unsalted butter
1 small yellow onion, minced
1 stalk celery, thinly sliced
2 carrots, thinly sliced
5 tablespoons all-purpose flour
2 cups chicken broth
2 cups shredded rotisserie chicken
1/3 pound green beans, trimmed and cut into 1-inch pieces
Salt and pepper
1 refrigerated pie crust
Preheat oven to 375 degrees. In a large saucepan, melt butter over medium heat. Add onion, celery, and carrots and cook until onion is translucent, about 4 minutes. Add flour and cook, stirring, for 1 minute. Gradually add broth, stirring constantly, and bring to a boil. Reduce heat and simmer 5 minutes.
Meanwhile, roll out pie crust and cut 4 circles, using the perimeter of a ramekin for size. Set aside.
Stir chicken and green beans into vegetable mixture and season with salt and pepper to taste. Divide filling among four 8-ounce ramekins. Top the pies with crust and press along the edges to seal. Cut a small X in the center of each pie to vent. Place ramekins on a baking sheet (in case of drips) and bake for 30 - 40 minutes, until filling is bubbling and crust is golden. Serves four.

So, do you have tonight's Dinner all planned out yet?

You might want to give these Mini Chicken Pot Pies a try!  Add a small Salad, or some Applesauce on the side, and you are ready to go!

As always, have a "Jewel" of a Day!
Jan
